We made these on the BBQ |
- 6 potatoes, peeled & grated
- 1 tin corn, drained (or 1-2 cups frozen corn)
- 2 small onions, finely chopped
- 4 eggs
- 1 zucchini, grated
- 1 carrot, grated
- salt and pepper
- 1 tbsp parsley or a herb of your choice
- 1 tbsp flour (I use wholemeal) optional
Method:
- Mix everything together in a large bowl
- Spoon into frypan or on BBQ, size is up to you
