RECIPE- Potato muffins - 4 ingredients

I just mashed potatoes with milk and butter and then added cheese. You could use grated cheese or creamed cottage cheese.

Scoop into a non stick muffin pan/tray.

I also added a blob of butter on top and sprinkled some sesame seeds before popping them into the oven at about 180c for 15-20 minutes or until golden brown on top, yum!

You can add any of the following ingredients plus more to POTATO:
  • Cheese -grated or creamed cottage cheese
  • Chia seeds
  • onion/shallots
  • sesame seeds
  • bacon (diced bacon grilled first would be beautiful)
  • salmon pieces
