My 14 month old and 3 year old loved this, try it out, make your own variations depending on likes and dislikes. WARM OR COLD!
- 2 cups brown rice
- 1 large sweet potato (peeled & diced into cubes)
- 1 shallot (spring onion) sliced finely
- 1-2 cups sliced mushrooms
I cooked the brown rice in a rice cooker.
Stir-fried (with a little extra virgin olive oil) the sweet potato
After 5 minutes add mushrooms and shallot
Mix it all together.
OPTIONAL - Add lemon / lime juice over the top!
