We made these on the BBQ
  • 6 potatoes, peeled & grated
  • 1 tin corn, drained (or 1-2 cups frozen corn)
  • 2 small onions, finely chopped
  • 4 eggs
  • 1 zucchini, grated
  • 1 carrot, grated
  • salt and pepper
  • 1 tbsp parsley or a herb of your choice
  • 1 tbsp flour (I use wholemeal) optional
This quantity makes enough for the whole family plus leftovers!

  1. Mix everything together in a large bowl
  2. Spoon into frypan or on BBQ, size is up to you
Mixture will have liquid in bowl from vegetables and eggs. This is fine and will keep frtters moist once cooked. If you think its too much liquid - use the flour to thicken it a little.
